Matcha Pumpkin Spice Smoothie

Ingredients:
1/3 Pint Matcha Green Tea Snow Monkey
1 Frozen Banana
1 Cup Oat Milk (or your favorite milk/milk alternative)
1 ½ Tbsp Pumpkin Spice Seasoning
2 Tbsp Spiced Vegan Whipped Cream (Optional)
Directions (legit does not get easier than what we’re about to write):
- Add all ingredients in a blender and blend until smooth
- Top with whipped cream if desired
Maple Cinnamon Oatmeal Cookies

Ingredients:
½ Cup Brown Sugar
2 Tbsp Melted Coconut Oil (or unsalted butter)
¼ Cup Pure Maple Syrup
2 Egg Whites
¼ Cup Maple Cinnamon Snow Monkey (let sit at room temperature)
½ Tsp Vanilla Extract
1 ½ Cups Gluten Free Rolled Oats
1 Cup Gluten Free All-Purpose Flour
¼ Tsp Baking Soda
½ Tsp Kosher Salt
Directions:
- Preheat oven to 350°F
- In a stand mixer, mix brown sugar and coconut oil together until incorporated
- Add maple syrup, egg whites, Maple Cinnamon Snow Monkey and vanilla extract, and mix on medium speed until incorporated fully
- In a separate bowl, combine remaining ingredients. Slowly add to the mixer while mixer is running on low speed
- On a parchment lined cookie sheet, drop dough 1-2 inches apart and bake for 10 minutes
- Let cool and enjoy plain, or create an ice cream sandwich with a scoop of Snow Monkey in the middle (we would have photographed this option, but Liza ate the ice cream sandwich before we could take a photo)
