Chocolate Dipped Chia Matcha Ice Cream Bars

60 MINS (+overnight freezing) | SERVES 6


     - 1 pint of Matcha Green Tea Snow Monkey

     - 2 tbsp scoops chia seeds

     - 1/4 cup solid coconut oil

     - 3 tbsp cocoa powder

     - 2 tbsp maple syrup

     - 1/2 tsp vanilla extract


     1. Melt you Matcha Green Tea Snow Monkey in the microwave using the defrost setting (or leave the pint out on the counter until completely melted)

     2. Add your chia seeds to your melted ice cream and mix together

     3. Pour mixture into popsicle molds

     4. Allow to freeze overnight or 12 hours at least

     5. After you have your popsicles frozen, melt your coconut oil in the microwave (about 30 seconds) in a cup

     6. Mix your cocoa powder, maple syrup and vanilla extract into the melted coconut oil to create a chocolate mixture

     7. All this mixture to cool for about 30 minutes

     8. Then take your popsicles out of the molds and dip your popsicles into the chocolate mixture

     9. The shell will harden in a few seconds

     10. You can put them on a tray and set back in the freezer or enjoy right away!
